A Healthy Dish for Busy Nights
Cooking for my family can feel like a puzzle. We have a wide range of palates to please, with kids ranging in age from 7 to 18 years old and grandparents that join the family table most nights. On top of that, we navigate food sensitivities like dairy and gluten-free needs and some who stick to a Low FODMAP diet. Finding something healthy, simple, and delicious is no small task!
I have always loved adding AzureWell Organic Fermented Turmeric + Ginger to smoothies and juices. When I first tried adding it as “seasoning” to roasted vegetables, I wasn’t sure what to expect. Would it taste too “healthy”? Would my littlest notice something was different? The verdict? They all loved it! The warm, slightly sweet, and savory flavors pair perfectly with roasted vegetables, and now this dish is on regular rotation in our house.
This recipe is versatile and perfect for seasonal cooking. You can use up whatever veggies you’ve got on hand or in the garden. This recipe is simple, comes together quickly, and makes a great side dish, or even a main dish if you serve it over quinoa or rice. I hope you enjoy it as much as we do!
Ingredients:
1 lb mixed seasonal vegetables (e.g., carrots, cauliflower, sweet potatoes)
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/4 teaspoon paprika
Salt and black pepper to taste
Instructions:
Preheat the oven to 400°F (200°C).
Chop the vegetables into even-sized pieces. Tip: smaller chunks cook faster and are easier for kids to eat. Spread them out on a baking sheet.
Drizzle the vegetables with olive oil, sprinkle with garlic powder, paprika, salt, and pepper, and toss to coat evenly. *If making Low FODMAP, skip the garlic powder.
Roast the vegetables for 25-30 minutes, stirring halfway through, until they are tender and golden with crispy edges.
While the vegetables are still warm, transfer them to a large mixing bowl.
Sprinkle AzureWell’s Organic Fermented Turmeric + Ginger evenly over the roasted vegetables. Toss gently to ensure the powder coats all the vegetables without clumping.
Serve warm as a side dish, or over rice or quinoa for a hearty, nutrient-packed meal.
