Pink Popcorn with AzureWell’s Organic Fermented Beet Root Powder

A Healthy Snack Even Your Kids Will Love!

Pink popcorn in various colored bowls.

Finding creative ways to get my kids to eat their veggies has always been a battle. If a food is not the perfect texture or color, I’m lucky if I even get my kids to taste it. This is especially true for snack time. I’ve been on a mission to find healthier snacks that all of my kids can enjoy and we’ve finally found a hit in popcorn with Azurewell’s Organic Fermented Beet Root Powder, which my kids love to call “Pink popcorn”!

Popcorn can be a healthy snack as long as it’s not drowned in butter, salt and oil. It’s a whole grain, complex carbohydrate and a good source of fiber. To keep our popcorn wholesome, we opt for organic, non-gmo kernels and prepare it in an air popper. There are other methods to make popcorn but we stay away from prepackaged microwave popcorn due to the potential of added chemicals and excessive amounts of fats and salt.

Seasonings are another important factor and while beets may seem like an odd choice, the two actually pair well. AzureWell’s Organic Fermented Beet Root Powder has been the perfect way to create a fun, colorful snack that adds nutritional value. Beets are packed with vitamins and minerals like iron and potassium and are a great way to add fiber into the diet. Beets are probably best known for their nitrates. These compounds help with the body’s blood flow. On top of all of these benefits, this beet powder is fermented. Fermentation helps to make the nutrients more bioavailable and digestible while also adding postbiotics.

When my kids are eating this snack, I can feel one step closer to accomplishing my mission for a healthier life for my family!

Pink Popcorn with AzureWell’s Organic Fermented Beet Root Powder Ingredients:
Instructions:
  • If using powdered sugar, mix together with beet powder and salt, set aside.

  • Prepare popcorn using your preferred method.

  • Pour popcorn into a large bowl and drizzle with melted butter. Mix together.

  • Sprinkle beet powder/salt mixture over popcorn and stir to evenly coat.

  • Taste and add more seasonings as desired.

  • Makes about 4-5 servings.

AzureWell’s Organic Fermented Beet Root is very versatile as a natural color with added nutritional value. This recipe is a quick way to boost a kid’s snack.

Notes:

For best results, add the seasonings to hot popcorn with butter or oil (of your choice) to help it stick better.

Start off light on the seasonings and adjust as you go along to suit your taste.

You can substitute a low calorie sweetener in place of powdered sugar. A new favorite of mine is allulose. Monk fruit and xylitol are other options that can be used. The sweetener makes it more of a kettle corn and balances some of the earthy beet taste. My kids prefer this version.

Your fingers will turn purple from the powder!
